Citrus mojo yuca
Ingredients
· 2 lbs. United Flavors® Yuca
· ½ cup olive oil
· 1 red onion, thinly sliced
· 8 garlic cloves, minced
· 1 tsp oregano
· ½ tsp cumin
· 1 to 2 fresh orange chilies (or habanero, depending on desired heat), thinly sliced
· ½ cup orange segments
· ½ cup fresh lime juice
· ½ cup fresh orange juice
· 1½ Salt
· Fresh cilantro leaves
Procedure
Boil frozen yuca in salted water for about 25-30 min or until fork tender. Drain and set aside to keep warm.
Heat oil in a small saucepan over medium, stir in garlic, red onion, cumin, and oregano, then immediately remove from heat. Let cool 10–15 minutes.
Stir in chile, orange segments, lime juice, orange juice, and salt.
Garnish with cilantro leaves
